Beginner farmer with 5 years of experience in food safety for fresh produce

I am currently a food safety manager for a fresh produce packing facility. I'm looking to start my own farm and would like to go full-time with it by the end of next year. Although I do not have growing experience, I have plenty of safety experience and plan on hiring a farmer to assist me through the transition process. I would like to begin with growing a variety of crops. Mainly herbs and hemp, as well as fresh produce. Organic, of course! I will be producing medicinal tinctures and bitters products as well.
