New farmers looking to expand my current product line by growing root vegetables, flowers, mushrooms & harvest syrups

I have some irrigation equipment that is being used in my current / other psi washing business and purchased pecan harvesting equipment for my east coast fall harvest but I honestly love the NC mountains and want to plan a 5 year plan to grow garlic, other root vegetables, maybe mushrooms and even harvest different tree syrups if I could get enough highlands / high elevation hardwoods property for long term lease. Working on a buisness plan for beginning summer 2026.
